Our kitchen is proudly, fully vegetarian, rooted in Bhutanese home cooking. The star is Ema Datshi, the national dish of chilies and farmhouse cheese, served alongside Kewa Datshi, Shamu Datshi and steaming red rice grown in the valleys around Thimphu.
